If You Like It Then You Better Put An Egg On It!

Image Why put an egg on it? Well, why the hell not?! This whole30 thing is going well so far. I would say the only “bad” thing is that I haven’t had a ton of time to grocery shop, cook or meal prep. So a lot of the food I’ve been eating must be “boring” to you guys if you follow me on Instagram or Facebook. I use the same 4 ingredients over and over again but I really don’t care. I would just rather do some more creative things for all of you! I’ll work on that. For dinner tonight I made a stirfry with chitties, shredded brussies and onions. Then I topped it with an egg, because I’m a honeybadger. And I guess honeybadgers like eggs..? #iono

Ingredients:

  • 2 large chitties, cubed
  • 2 cups brussies, shredded
  • 1/2 yellow onion, diced
  • 1 pimpin ass egg
  • 1/2 lemon
  • ghee
  • garlic pow
  • black pepper
  • thyme
  • paprika
  • red pepper chili flakes

I browned my onions in ghee, covered them in garlic pow, just because I’m obsessed with garlic. Let that brown too. Mmmm.. burnt garlic pow that gets crusty on the bottom of the pan. YOMS. Image Then I threw in my shredded brussel sprouts. Let that brown up in that good ol’ ghee. You bet your garlicky ass I put more garlic pow on them brussies! Mix, mix, mix. Then I made a hole in the middle of my pan. I do this a lot. I don’t know why. Throw that chicken in last because the diced pieces cook pretty quickly and I don’t want to overcook them and make them tough. Image Now add all the spices. Go on. Image Awwww yeah babaay, that’s the stuff. Squeeze that lemon juice on top. Mix. Image I was gonna just dig in but I looked in the fridge for what else I could add and figured I’d toss an egg on. Let it cook a bit, then scrambled the whole thing in. Dinner was really good and pretty simple, basic food. Protein, veggies, spices. That’s it. Image
