Leftover-Christmas-Ham Egg Muffins & Chive Egg Muffins

I’m late but Merry belated Christmas and Happy New Year, friends! I had several (4-5) Christmas potlucks and sit-down dinners. Needless to say I overindulged a-lottle since…. June. *looks around* Errmm.. yeah. I celebrate early? Hee.

I hosted Christmas dinner with my family this year and my hub made steak as the main protein. I’m not a huge fan of honey-baked ham or any sweet meats so I didn’t have any of that and that was our 2nd protein for din. Sides were garlic cauliflower & “empek empeks” – which are Indonesian fish-egg thingies. My mom’s family are from Indonesia so my aunts make some bomb Indo food. My aunt brought over the empek empeks for appetizers.

We also baked root veggies. It came out supes yummay.

  • Oiled up the baking sheet
  • Sliced up carrots and parsnips
  • Sprayed more oil
  • Salt + pepper to taste
  • Baked for 12-15 min at 425 degrees (*Watch them bc mine started to burn)
  • Sprinkle dill after baking

This year I got the best Crossfit & Paleo haul ever. #Fitmas! Either my friends and family got the hint or they’re trying to tell me I’m getting a bit tubby. Which I am. So, cool.

I got an abmat, 35lb kettlebell, Fit Four Gripper gloves, a Lulu Lemon gym bag, a Gaiam Everything Fits gym bag, 2 diff mobility balls, Reebok Nano’s 3.0, a knee sleeve and 3 Paleo cookbooks.

Knee SleeveSO, who else has about 60 lbs of ham leftover from Christmas dinner? I sho’ did so I decided to make ham egg muffins. Super easy!

  • Preheat oven to 350 degrees
  • Spray olive oil on muffin tins
  • Place pieces of cold leftover ham around the sides of the tins, on the bottom, or both
  • Place one whole egg into each tin
  • Sprinkle salt+ pepper
  • Bake 20 min @ 350 degrees

Paleo Catwon Leftover Christmas Ham & Egg MuffinsSince I was making egg muffins, I decided to make little Asian chive egg muffins. These are usually made into egg pancakes but I was too lazy to pan-fry so I tossed em into muffin tins!

This makes 12 chive egg muffins

  • Preheat oven to 350 degrees
  • Chop Chives just under 1 inch long
  • Scramble 14 eggs in a mixing bowl
  • Add salt + pepper
  • Sprinkle garlic powder
  • Add a little sugar-free fish sauce
  • Add chives
  • Mix everything
  • Spray olive oil on muffin tins
  • Fill muffin tins 75%
  • Bake 20 min @ 350 degrees

Paleo Catwon Chive & Ham Egg Muffins

How many of you are starting a new health or fitness plan in the new year? I will definitely be kicking it up a notch. Got myself a Fitbit just for fun. It counts the steps you take, calories burnt, stairs climbed, distance ran, active minutes, sleep, etc. I’m not a fan of counting calories anymore but it’s just something fun to have & keep you active.

After those egg muffins, I still had about a million lbs of ham leftover, so I made my hub & bro ham, portobello mushroom egg scrambles.
